Smoke off a truck, a cook who clearly has years in his hands, and covered tables to hide from the Texas sun. That's Texana, and that's most of what a person needs. I had the chopped beef sandwich, the brisket burger, and the sausage wraps because I couldn't make myself choose, and I'd do it again tomorrow. Then a bowl of jambalaya showed up, savory with a real kick, the kind of side dish that means somebody actually cares.
The folks running this truck are the genuine article, friendly without performing it. There's a bar right next door and cornhole in the lot, so you can make a whole evening of it without ever getting in your car. Support local is a bumper sticker most places. Here it's just dinner.

The chopped beef sandwich and the brisket burger. If the jambalaya is on, get it too.
