PJ's carries a little Louisiana in it and doesn't hide it. The beignets are the move, the egg bites genuinely good, and on a quiet morning the gentleman at the counter took real time to walk me through everything before I landed on the cold brew. It was the Viennese blend, smooth with a slight surprising aftertaste I kept chasing. There's a secret menu too, if you ask the right way.

What keeps me coming back is the people. The owners and the staff are the warm, greet-you-at-the-door type, and the app makes a morning order painless. My standby is shaping up to be a frozen King Cake and, when I'm off coffee, a coconut Red Bull. It's a chain on paper, but this one's run like it belongs to somebody who cares.
