By most accounts Einstein Bros has quietly become a breakfast bailout. Reviewers say the bagels come out soft and chewy, the store catches the morning sun and stays clean, and even near closing the bagels stay fresh and the staff stay bubbly. Names come up, a Lisa running a warm floor, a Jayden hooking up a great visit, and the line, long or not, moving, a combination people note is rarer than it should be.
